LOCATION
This position is located at our AMANPURI in Phuket, Thailand.


POSITION OVERVIEW
You are expected to be fully responsible for the preparation of Japanese food. To supervise the work of the Japanese Kitchen team member. To advise on the preparation of Japanese menus and the purchasing of Japanese food related equipment and ingredients.


Nama pays modern-day homage to Japan's ancient culinary heritage, combining seasonal Japanese ingredients with local Phuket produce to create dishes of great delicacy and finely balanced flavour.


RESPONSIBILITIES

  • To organize, supervise and participate in the work of all production personnel engaged in the preparation of Japanese food.
  • To participate creatively in the preparation of Japanese menus and special food items, as well as in the organization of Japanese food promotions.
  • To be responsible for the cleanliness, sanitation and orderliness of the Japanese Kitchen, in cooperation with the F&B Controller.
  • To coordinate with the Director of Food & Beverage, Director of Catering & Conventions and Restaurant Manager in matters concerning the Japanese food preparations for banquet functions.
  • To conduct daily inspections of refrigerators, stores, outlets and the kitchen area.
  • To be in charge of food issuance station during service hours.
  • To perform other duties common to supervisory personnel.
  • To train junior team member on the job in order to improve their standard.

QUALIFICATIONS

  • Work experience as a Sushi Chef or at an Asian restaurant
  • Good knowledge of various sushi types, Japanese food and techniques
  • Ability to work both fast and accurately
  • Team spirit
  • Availability to work during business hours, including weekends and evenings
  • Certification from a culinary school is a plus
